Since 1870 Smithfield hams have been carefully chosen, hand rubbed with salt, then coated with black pepper, and cured for up to one year.  Gentle hickory wood smoking combined with a unique dry salt curing process yields hams with our world famous Gwaltney smokehouse flavor, a flavorful, robust tasting dry-cured ham with the highest salt content. Slice paper thin. The dry salt curing process used for Smithfield Hams is a time honored method of preserving meats that was handed down from our Colonial forefathers. The process itself results in a unique tangy taste that distinguishes Genuine Smithfield Hams from the other less salty, milder smoked hams.
